Double Choc Chip Cookies

Nothing too exciting and no back story with this cook.  I was just after some cookies and what is better than subway cookies, so after a lot of searching on google for various recipes that claimed to have subway like cookies, I settled on this one.

Double Choc Chip Cookies

Prep Time: ~10 min
Cook Time: 10 min

Ingredients

  • 130g softened butter
  • ½ cup dark brown sugar
  • ⅓ cup caster sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 ¼ cups plain flour
  • ¼ cup coco powder
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup white chocolate chips
  • 1 cup dark chocolate chips

Instructions

  1. Preheat the oven to 175ºC/350ºF.
  2. Put the softened butter, brown sugar and caster sugar into the bowl of your mixer. Beat them together until the mixture is lighter and everything is well combined. (about 2-3 minutes)
  3. Add the vanilla extract and the egg, then beat once more until everything is creamy and even lighter in colour. (This takes about 3-4 minutes)
  4. Add in the flour, coco powder, salt and baking soda, then mix until the flour is just combined.
  5. Tip in the the white and milk chocolate chips into the mixture.
  6. Then mix until everything is combined.
  7. Roll golf ball sized balls of dough and place them onto a baking sheet lined with cooking paper. Ensure they are 5cm (2 inches) apart
  8. Bake for 10 minutes until lightly golden. (They will be soft when you take them from the oven!)
  9. Carefully transfer the cookies still on the cooking paper to a cooling rack, then use a spoon to gently flatten the still soft cookies.
  10. Leave the cookies to cool.

Result

While I kept to the original recipe for the most part, I made a few key changes.  As I've never made the original to compare these too, I must say these were amazing and I'll be using the exact same recipe again.
