ANZAC Biscuits

So this is the first of hopefully many blog posts I will be doing. I've always enjoyed cooking, but hated the clean up and I was lazy, so my default behaviour was to just getting take away. Since marrying my beautiful wife (Julie) 3 years ago, she has being try to change me and move me away from so much takeaway and unhealthy eating; but it wasn't until becoming a dad to my amazing daughter Violet 6 months ago, that this really kicked in.


Just before Violet's 6 month birthday, I decided to start to document a few of my cooking achievements (and failures). They won't all be health, and most will probably be very very easy and quick (I'm still lazy), but this is my first step to seriously reducing takeaways and pre-made meals.


So about a week after ANZAC Day I wanted some snacks for the week, and I thought what better than some ANZAC Biscuits.





ANZAC Biscuits

Prep Time: 10 min
Cook Time: 15-18 min

Ingredients
  • 1 cup rolled oats
  • 1 cup desiccated or shredded coconut
  • 1 cup plain flour
  • 3/4 cup caster sugar
  • 125 g butter, chopped
  • 2 tbsp golden syrup
  • 2 tbsp water
  • 1/2 tsp bicarbonate of soda

Instructions
  1. Preheat oven to 170◦C (150◦C fan). Place baking paper on a large baking tray.
  2. Combine dry ingredients (excluding bicarb soda) together in a medium mixing bowl.
  3. Place butter and golden syrup in a microwave safe jug. Heat in microwave on high/100%/800 watts for 70-80 seconds, or until butter has melted.
  4. Mix the water and bicarb soda in a small bowl or measuring cup and stir into the butter mixture.
  5. Pour onto the oat mixture and mix well with a Spatula.
  6. Roll tablespoons of mixture into balls and place on baking paper with space in between.
  7. Bake for 15-18 minutes, or until golden.
  8. Remove from oven and place on a tray to cool.
  9. With the back of a spoon flatten the cookies.
  10. Repeat with remaining mixture.

Store in an airtight container. Ours were still good after 2 weeks in Tupperware containers when we finished them.

Result
It's been a long time since I've had an ANZAC Biscuits, but these tasted as good as I remember.  I'm putting this in the win column and will be cooking them again.  Next time though I might take the suggestion on the page I got the recipe from and use brown sugar instead of caster sugar.
