Ever since I was a young child dad would cook scrambled eggs for breakfast every month or so. My brother and I weren't big egg fans, so dad's idea was to add something extra to make eggs more fun and enjoyable. It wasn't always the same, but the principle was the same, eggs, meat, herbs and/or spice.
As I've grown old my tastes have changed and I quite enjoy eggs now, but I've tended to make the below a regular weekend occurrence for Julie and myself.
Sunday Family Scrambled Eggs
Prep & Cook Time: 5-15 min
Ingredients
- 2 Eggs per person
- Meat eg
- bacon (diced and cooked)
- ham (diced) or
- sausage (diced & cooked)
- Herbs and/or Spices eg:
- parsley ,
- coriander
- dried oregano
- chilli powder
- Salt & pepper
- Good splash of milk
- Grated cheese
Instructions
- Crack the eggs into a bowl
- Coarsely chop the herbs and put into the bowl
- Dice meat. If using bacon or sausage lightly cook
- Add salt & pepper to taste
- Mix until yolks are all mixed together
- Add milk & mix together
- Put meat in bowl and mix in.
- Cook eggs stirring occasionally until nearly done
- Add in cheese and stir until eggs are fully cooked.
- Serve on toast
Notes
This is really good with nearly anything and it's just about getting the mix correct. The recipe changes depending on what I've got in the fridge at the time (or what left overs I have). I've put in diced tomato, capsicum, mushrooms, left over chicken and they have all worked. The above is my stock that I always fall back to and always make sure I have these ingredients in the fridge.
Result
An amazing simple and quick breakfast that the entire family will enjoy.
